Recipe of Crispy-Falafel Pita

Ingredients

  • Dried chickpeas
  • Fresh parsley
  • Fresh cilantro
  • Onion
  • Garlic
  • Ground cumin
  • Ground coriander
  • Baking soda
  • Salt
  • Flour or chickpea flour
  • Olive oil
  • Pita bread

Instructions

  • Falafel Mixture preparation 
  • Take a bowl and add chickpeas, parsley, cilantro, onion, and garlic. Then, put all these in a food processor and mix them roughly but not smoothly. 
  • Put cumin, coriander, baking soda, salt, pepper, flour, lemon juice, and olive oil in a food processor & add the pulse function. Let them combine completely. 
  • If the mixture is too dry, add water, approximately 1 tbsp, to make them stick together.
  • Now, Place the mixture in the fridge for 30 minutes.
  • Shape & Fry the Falafel
  • In a pan, add oil and heat them around 350°F/175°C.
  • Then, give the shape of all mixtures equally, such as small balls or patties.
  • Fry all balls or patties until the color converts into golden.
  • After frying, place the cooked falafel on paper towels to absorb excess oil.
  • Assemble
  • Warm pits bread & add hummus or tahini sauce inside the pita as a layer.
  • Add all ingredients like crispy falafel, lettuce, tomatoes, cucumbers, and pickled onions.
  • If you like, add more tahini sauce on top for extra creaminess.
