Ingredients

  • Ground lamb
  • Breadcrumbs
  • Fresh herbs
  • Spices
  • Egg
  • Salt and pepper
  • Pita bread
  • Hummus
  • Tomato and cucumber salad
  • Pickled onions
  • Cabbage slaw
  • Pickles
  • Garlic dressing
  • Skhug or a spicy green sauce

Instructions

  • Step 1: Make the Lamb Meatballs
  • Combine ingredients in a bowl, such as ground lamb with parsley, cilantro, minced garlic, harissa paste, and all spices (cumin, coriander, paprika, cinnamon, allspice, black pepper, and salt). Don’t use a food processor to maintain the texture.
  • Give the shape like a golf ball-sized of all mixed ingredients mixture, and make 10-15 meatballs according to your size of balls.
  • Step 2: Cook the Meatballs by stovetop method
  • Place a large frying pan (skillet) on the stove and turn the heat to medium. Also, add a small amount of olive oil.
  • Add meatballs respectively, and make sure that the meatball has space between them because all sides of that will cook completely.
  • Don’t let the meatballs move for 3-4 minutes until in change color into brown. And cook for 4 minutes that will completely cooked.
  • Cook the Meatballs by Oven method
  • Turn on the oven & set it at 400°F (200°C) preheated. Then, take a baking sheet with parchment paper & put all the meatballs carefully. Make sure the space between meatballs should be. 
  • Sprinkle olive oil or oil on the top of meatballs.
  • Let them take 20 minutes to bake it completely, or the temperature becomes at least 160°F (71°C).
  • Step 3: Prepare Additional Components
  • After cook or bake all meatballs add some toppings like tomatoes and cucumbers, pickled onions, and cabbage slaw.
  • You can also make a garlic dressing or tzatziki by mixing Greek yogurt with grated cucumber, minced garlic, olive oil, lemon juice, fresh dill, salt, and pepper for more flavor, but it is optional. 
  • Step 4: Assemble the Pita
  • Heat pita bread to make it flexible or soft.
  • Add a layer of hummus to the pita and add some cooked meatballs inside the pits.
  • On the top of meatballs, add some tomatoes, cucumbers, pickled onions, and cabbage slaw.
  • For extra flavor, add pickles, garlic dressing, or shrug at the end.
